Panini with Tomato Jalapeno Marmalade





1 loaf of sourdough bread, sliced
1 tablespoon olive oil
1 5 oz. jar Eat This Tomato Jalapeno Marmalade
1 bunch of arugula
1 pound of Parmacotto ham
½ pound of sliced Manchego cheese

Preheat Panini press (or a cast iron skillet).
Layer one side of bread with ham, cheese and arugula.
Spread Eat This Tomato Jalapeno Marmalade on the other slice of bread.
Put slices together and brush with olive oil.
Place in Panini press until golden brown (or place in a cast iron skillet, and place a smaller cast iron skillet or foil-wrapped brick on top of the panini).
