Oven Roasted Salmon with Tomato Jalapeno Marmalade



4 salmon fillets (4 oz. each)
1 tablespoon of olive oil
1 5 oz. jar Eat This Tomato Jalapeno Marmalade
1 bag of mixed baby greens
1 Fuji or Honey Crisp apple, diced
½ cup chopped walnuts
1/3 cup olive oil
2 tablespoons white wine vinegar

Preheat oven to 375 degrees.
Place salmon fillets on sheet pan and roast for 10 minutes.
Remove sheet pan from oven and turn on broiler.
Spread Eat This Tomato Jalapeno Marmalade evenly on top of salmon, and return pan to upper part of oven for about 5 minutes. Keep an eye on salmon during this time so as not to burn the marmalade.
Remove pan from oven.
Toss salad greens, apple, walnuts, oil and vinegar in a bowl. Divide salad on four plates, and top with salmon.
